Thai Banana in Coconut Milk

Ingredients

  • 1 1/2 cups coconut milk
  • 2 ripe large bananas sliced into 2-inch coins
  • 1 tablespoon white sugar (organic for vegan-friendly) or to taste
  • 1/8 teaspoon salt or to taste

Instructions

  1. In a medium saucepan, bring the coconut milk to a gentle boil.
  2. Add the sliced bananas and reduce the heat to a simmer. Cook until the banana pieces are tender but not falling apart, stirring occasionally, about 5 minutes.
  3. Add sugar and stir until it’s fully dissolved. Sprinkle with salt. Serve warm.
