Slow Cooker Tater Tot Cowboy Casserole Recipe

Ingredients

  • 1 pound lean ground beef (or ground turkey)
  • 1 onion diced
  • 12 ounces frozen mixed vegetables 1 bag
  • 10.75 ounces condensed cream of mushroom soup 1 can
  • 1 cup shredded sharp cheddar cheese
  • ½ cup milk
  • ¼ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper, to taste
  • 20 ounces frozen tater tots 1 bag

Instructions

  1. Spray bottom of slow cooker with non-stick cooking spray.
  2. In a large skillet, cook beef and onion over medium heat until beef is no longer pink. Drain grease, then stir in frozen mixed vegetables, soup, 1/2 cup cheese, milk, sour cream, and seasonings.
  3. Place meat and vegetable mixture in the bottom of the slow cooker. Top with frozen tater tots and shredded cheese.
  4. Cook, covered, on low heat for 6 hours. Let stand, uncovered, 15 minutes before serving.
