Shrimp and Chinese Vegetable Stir-Fry

Ingredients

  • 1 bag Success® Brown Rice
  • 2 tbsp canola oil
  • 1 cup sliced mushrooms
  • 1 cup diced onion
  • 1 clove garlic, minced
  • 1 tbsp grated fresh ginger root
  • 1 cup frozen Asian-style stir-fry vegetables, thawed
  • 1/2 lb uncooked shrimp
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/4 cup thinly sliced green onion
  • 2 tbsp sesame seeds

Instructions

  1. With lots of veggies and delicious Success® Brown Rice, this Chinese-inspired shrimp and vegetable stir-fry is a complete meal that’s ready in minutes!
  2. Prepare rice according to package directions. Spread rice on a cookie sheet and allow to cool.  
  3. Heat oil in a wok or large skillet over high heat. Add mushrooms, onion, garlic and ginger and sauté for 2 minutes, or until beginning to soften. 
  4. Add stir-fry vegetables and cook for an additional 2 min. Add shrimp and cook for another 3 minutes. 
  5. Whisk together oyster sauce, soy sauce and sesame oil in a small bowl. Add to stir-fry mixture and cook stirring for 1 more minute. 
  6. Add rice and green onions to skillet and toss to combine and heat through. Garnish with sesame seeds.
