Chinese Chicken Congee for Breakfast

Ingredients

  • 1 Chicken breast
  • 1 tea spoon Salt (for chicken)
  • 2 slices Ginger
  • 2 table spoon Sesame oil
  • 1 cup Rice (I used Japanese rice)
  • 8 cups Hot water
  • To taste Salt and pepper
  • Leek or any other vegetable for topping
  • 1 Ready made deep fried tofu (if it’s available)
  • 2 table spoon Soy sauce (for deep fried tofu)

Cooking Instructions

  1. Sprinkle 1 teaspoon of salt on both sides of the chicken.
  2. Heat sesame oil in a pan and stir fry thin-sliced ginger. When it becomes fragrant, add 1 cup of rice and coat the surface of rice.
  3. Once the rice becomes transparent, add hot water(be careful!).
  4. Add chicken and bring to a boil. Once it becomes boiling, turn to the small heat and cover with a lid. Heat for 40 minutes. Serve hot and enjoy!
