Spinach Egg Tacos

Ingredients

  • 1/4 avocado
  • 1 teaspoon lime juice
  • 2 hard-boiled eggs, chopped
  • 2 corn tortillas, warmed
  • 1 cup chopped spinach, divided
  • 2 tablespoons shredded Cheddar cheese, divided
  • 2 tablespoons salsa, divided

Directions

  1. Smash avocado in a small bowl with lime juice and salt. Mix in eggs. Divide the mixture between tortillas and top each with 1/2 cup spinach and 1 tablespoon each cheese and salsa.
