Shanghai Fried Noodles 

Ingredients

Main Ingredients

  • 3 tablespoons oil, divided
  • 8 dried shiitake mushrooms (soaked, thinly sliced)
  • 450g udon noodles (break up gently)
  • 2½ tbsp dark soy sauce
  • 2 tbsp soy sauce
  • ¼ tsp sugar
  • 1 small bunch choy sum/bok choy (washed and trimmed)
  • Black vinegar (optional)
  • Oil

For the Pork

  • 170g lean pork (thinly sliced)
  • ¾ tsp cornflour
  • ½ tsp light soy sauce
  • ⅛ tsp dark soy sauce
  • 1 tsp Shaoxing wine
  • Pinch of sugar

Directions

To Prep

  1. Combine pork and marinade ingredients, set aside for 5-10 mins.

To Cook

  1. In a wok, heat 1 tbsp of oil over high heat. Stir-fry the pork until browned. Lower the heat, remove and set aside.
  2. Add 2 tbsp of oil over medium heat, saute the mushrooms for about 2 mins.
  3. Add the noodles and seasonings. Stir-fry until the noodles are in deep brown colour. Add a little dark soy sauce for darker colour if desired.
  4. Mix in the vegetables until wilted. Serve hot. Add a few drops of black vinegar on top (optional).
