Instant Pot Rice Pudding Recipe

Ingredients

  • 1 cup Arborio rice
  • 2 cups whole milk, more as needed
  • 1 cup water
  • 1/3 cup granulated sugar
  • 1/3 cup raisins, or dried cranberries
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 dash ground nutmeg
  • 1 dash salt

Steps to Make It

  1. Gather the ingredients.
  2. In the Instant Pot, combine the rice, milk, water, sugar, raisins, vanilla, cinnamon, nutmeg, and salt. Stir to blend.
  3. Lock the lid in place and turn the steam release vent to the sealing position. Choose the pressure cook or manual button (high pressure) and set the time for 5 minutes.
  4. When the time is up, let the pressure come down naturally for 10 minutes, then carefully turn the steam-release vent to the venting position to release the remaining pressure.
  5. Stir the rice pudding and let it stand for a few minutes. It will thicken more as it cools. If it is too thick, add a little extra milk or some cream.
  6. Spoon the rice pudding into small bowls or dessert dishes. Top the pudding with a dollop of whipped cream, if desired, or drizzle a little milk or cream over the pudding and finish it with a sprinkling with cinnamon sugar.
  7. Enjoy.
