Slow Cooker Chicken Carnitas Recipe
Ingredients
- 1½ pounds boneless, skinless chicken breasts
- ⅓ cup orange juice
- ⅓ cup lime juice
- 1 red onion diced
- 1 jalapeno seeded and diced
- 2 garlic cloves minced
- 1 packet taco seasoning (or homemade taco taco seasoning)
Instructions
- Spray inside of slow cooker with non-stick cooking spray.
- Place chicken breasts inside slow cooker. Pour orange juice and lime juice on top.
- Sprinkle onion, jalapeno, garlic, and taco seasoning on top of chicken.
- Place lid on top and cook on LOW for 5-6 hours (or 2-3 hours on high).
- Remove chicken and transfer to a plate or cutting board (leaving liquid in the pot).Shred the chicken using 2 forks.
- Preheat broiler.
- Spray a large baking sheet with non-stick cooking spray and spread shredded chicken out on it.
- Pour 1/3-2/3 cup of the liquid left in the Slow Cooker on top of the shredded chicken.
- Place chicken under the broiler for 2-4 minutes or until the ends start to brown and turn crispy (it will happen fast, so watch it carefully!).
- Remove chicken from oven and serve on top of tortillas, nachos, salad, or any way you want to eat it!
