Ingredients
- 1 slice day-old bread
- 25g butter, melted
- 2 tsp chopped fresh dill, plus extra, to serve
- 2 tsp chopped fresh chives
- 2 (about 180g each) skinless salmon fillets
- Extra virgin olive oil, to serve
- Lemon wedges, to serve
Method
- Place the bread in a small food processor. Process until fine crumbs form. Transfer to a bowl. Add butter, dill and chives to the bowl. Season. Stir well to combine. Press mixture over the top of each salmon fillet.
- Place the herb-crusted salmon in the basket. Cook for 4 minutes at 180°C or until salmon is cooked to your liking. Drizzle with oil. Serve with lemon wedges and fresh dill.
