Spice-Roasted Cauliflower with Green Beans

Ingredients

  • 1 c. long-grain white rice
  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. tomato paste
  • 2 tsp. garam masala
  • 1 tsp. brown sugar or honey
  • 1/8 tsp. cayenne
  • Kosher salt
  • 1 medium head cauliflower (about 2 lbs), cut into florets
  • 6 cloves garlic, smashed
  • 1 onion, cut into 1/2-in.-thick wedges
  • 1/2 lb. green beans, trimmed and halved
  • Chopped cilantro, for serving

Directions

  1. Heat oven to 425°F. Cook rice per package directions. 
  2. In large bowl, whisk together oil, vinegar, tomato paste, garam masala, brown sugar or honey, cayenne, and 1/2 teaspoon salt.
  3. Add cauliflower and toss to coat. Toss with garlic and onion. Arrange on rimmed baking sheet and roast 18 minutes.
  4. Add green beans to sheet and toss to combine. Continue roasting until vegetables are tender, 10 to 12 minutes more. Sprinkle with cilantro and serve with rice.
