2 14-oz cans artichoke hearts, halved and patted very dry
1/3c. grated Parmesan cheese, divided
1 lemon
2Tbsp. flat-leaf parsley, chopped
Directions
Heat air fryer to 400°F. In large bowl, combine oil, garlic, thyme, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Add artichokes and gently toss to coat, then gently toss with 3 tablespoons Parmesan.
Add artichokes to air fryer basket, cut sides up, and top with remaining 2 tablespoons plus 1 teaspoon Parmesan. Air-fry, shaking basket halfway through, until golden brown and crisp around edges, 10 to 12 minutes.
Transfer to platter, then grate zest from just half of lemon and sprinkle with parsley.
