Last-minute Barbie cake

Ingredients 

  • 3 x 600g Coles White Mud Cakes
  • 2 x 520g pkts pink and white marshmallows
  • 2 x 400g ctns Coles Bake & Create Vanilla Buttercream Icing
  • Pink food colouring, to tint
  • 2 pkts Coles Bake & Create Pink Flower Decorations

Method

  1. Remove the legs from the barbie doll (you can pop them back on later) and wrap the base of the doll in plastic wrap.
  2. Place one of the mud cakes upside-down in the middle of a serving plate or round cake board. Top with the remaining two cakes, also upside-down. Use a 6cm cutter to cut a small ring into the centre of the top cake. Remove the centre cake to make a hole. Use a small sharp knife to score a ring around, about 3-4cm away, from the centre hole. Place the Barbie doll into the hole to check it is deep enough and that the doll will fit up to waist-height. Remove the doll.
  3. Use a sharp knife to cut the cake from the top scored ring to the base at an angle to create a cone shape out of the cake (it will slowly start to look like a dress). Use your hands to press the outside of the cake to seal the crumbs on the cut cake surface. Use a pastry brush to brush away any crumbs on the serving plate.
  4. Place the buttercream icing in a bowl and add pink food dye to tint. Stir until well combined. Spread the icing over the outside of the cake to cover.
  5. Cut the pink marshmallows in half (reserve the white marshmallows for another use). Place the marshmallows, cut-side down, on the outside of the cake in rows to cover. Insert the flowers in between the marshmallows to decorate. Insert Barbie into the top of the cake. Serve.
