Spice-Rubbed Grilled Chicken

Ingredients

  • oil, as needed
  • 2 tsp. paprika
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. ground thyme
  • 3/4 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground pepper
  • 2 lb. skinless, boneless chicken thighs, trimmed
  • 2 tbsp. red wine vinegar
  • 1 tbsp. honey

Directions

  1. 1Preheat grill to medium high heat. Lightly brush grill with oil.
  2. 2In a small bowl, stir together paprika, chili powder, cumin, thyme, salt, garlic powder and pepper.
  3. 3Place the chicken thighs in a large bowl, sprinkle the spice mixture over the chicken and toss to coat.
  4. 4Grill the chicken until it is just cooked through, 4 to 5 minutes per side.
  5. 5In a small bowl, whisk together vinegar and honey. Brush mixture over grilled chicken. Serve.
