Spice-Rubbed Grilled Chicken
Ingredients
- oil, as needed
- 2 tsp. paprika
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. ground thyme
- 3/4 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. ground pepper
- 2 lb. skinless, boneless chicken thighs, trimmed
- 2 tbsp. red wine vinegar
- 1 tbsp. honey
Directions
- 1Preheat grill to medium high heat. Lightly brush grill with oil.
- 2In a small bowl, stir together paprika, chili powder, cumin, thyme, salt, garlic powder and pepper.
- 3Place the chicken thighs in a large bowl, sprinkle the spice mixture over the chicken and toss to coat.
- 4Grill the chicken until it is just cooked through, 4 to 5 minutes per side.
- 5In a small bowl, whisk together vinegar and honey. Brush mixture over grilled chicken. Serve.
