2 Minute Korean Cucumber Salad with a Desi Twist

Ingredients

  • 2 large Cucumbers
  • 2 Garlic Cloves, lightly smashed
  • 1/4 cup Sesame / Til Oil
  • 2 tbsp (or to taste) Honey
  • 3 tbsp Soya Sace
  • 4 tbsp Vinegar
  • 1/4 tsp freshly ground Pepper
  • 1/4 tsp Red Chilli Flakes
  • 1 tbsp White Sesame Seeds
  • Salt to taste

Cooking Instructions

  1. Wash, peel & chop the cucumber into medium thin rounds Place in a serving bowl.
  2. Toast the sesame seeds for about a minute, stirring continuously. Take off heat
  3. For the dressing, take the sesame oil in a small bowl or katori, add the smashed garlic cloves, soya sauce, vinegar, honey, salt to taste, pepper powder, red chilli flakes & half of the toasted sesame seeds. Mix well
  4. Drizzle the dressing on top of the cucumbers. Toss gently. Allow it to sit in the fridge to marinate and chill till serving time
  5. Top with the rest of toasted sesame and serve chilled! Enjoy
